I was just messing around in the kitchen today while waiting for it to cool off so I could cut the grass. I came up with this.
It is a meatloaf recipie for you carbohydrate controllers - it isn't really "low carb", but compared to regular with all the bread filler it is. It is great for SBD folks and Atkins folks, just not in the first couple of weeks. Or good for someone who is doing a higher fat, lower carb cut. Also should make a lovely cheat for anyone else.
Ingredients:
1lb ground round (or the lowest fat beef or venison available)
1 15 oz can premade spaghetti or pizza sauce
1 15 oz can pieces and stems mushrooms
8 oz bag of shredded mozerella and
cheddar cheese (pizza cheese)
1 small onion.
6 slices of ham (from the little square packs...fits better)
1 egg
Non-stick
cooking spray
Garlic, salt, pepper
Prep -
Preheat oven to 350 deg.
Spread some plastic wrap or wax paper on the counter top and spray it with non-fat cooking spray.
Dice the onions and open the cans. (you could use fresh ingredients, but cans are too easy.
In a large mixing bowl add ground meat, egg, onion.
Mix well by hand.
Spread it as thin as possible across the bottom of the bowl.
Add salt, pepper, and garlic to taste (I love it covered with pepper and garlic very little salt).
Mix it up some more.
Spread the meat mix thinly across the wax paper about as wide as your baking pan is.
Spread a thin coat of sauce over the meat (about like covering a pizza crust with sauce).
Sprinkle about 1/2 to 2/3 of the mushrooms across the top of the sauce.
Sprinkle about 1/2 to 2/3 of the cheese across the top of the mushrooms.
Cover with the ham slices - should be a perfect fit if you spread the meat out right.
Using the wax paper, roll the meat up from one end (removing the wax paper as you roll). Squish the ends of the roll together so it still fits your pan.
Lift the meat roll with the wax paper into the pan - slide the wax paper out.
Now spread the rest of the sauce over the meat roll.
Sprinkle the rest of the mushrooms over the roll.
Put into oven for 1 hour 30 minutes.
Take out of oven, drain any fat off.
Sprinkle the rest of the cheese across this and put back into the oven for another 5-10 minutes until the cheese is melted.
Serve with whatever you want. A green salad would go good here right now.
