Oatmeal Bars Recipe..


Heya all,

I came accross a recipe for Chewy Oatmeal bars in a desert cookbook and I modified it a bit to make it healthier (Was originally 200 calories per bar). I thought I would share it as I made them today and they are awsome!

`````````````````````

Ingredients:

¾ Cup firmly packed Brown Sugar
½ Cup Splenda
8oz Non-Fat Yogurt
2 Egg Whites
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Light Soy Milk
2 Tsp Vanilla Extract
1 ½ Cups Whole Wheat Flour
1 Tsp Baking Soda
1 Tsp Ground Cinnamon
3 Cups Oats (Quick or Old Fashioned)


Directions:
1. Preheat Oven to 350 Degrees
2. In a large bowl, combine sugars, yogurt, egg whites, oil, milk and vanilla. Mix thoroughly
3. In a medium bowl, combine flour, baking soda and cinnamon. Mix thoroughly
4. Add dry ingredients to yogurt mixture and mix well
5. Stir in Oats one cup at a time
6. Spread dough onto bottom of an ungreased 13x9 baking pan
7. Bake 28-32 min or until dark brown
8. Remove from pan and let cool on a wire rack
9. Cut into 24 bars and serve =)


Nutritional Facts:
Serving Size: 1 Bar
Calories per Serving: 98
Makes 24 Bars

Fat: 2g
Carbs: 19g (17 Net)
Fiber: 2g
Protein: 3g

NOTE: If you substitute 1 Cup Splenda and use NO brown sugar:

Calories per Serving: 74

Fat: 2g
Carbs: 13g (11 Net)
Fiber: 2g
Protein: 3g

Jakanden, I notice that you didn't have sugar in the Nutritional Facts. Is brown sugar considered sugar? Like, if you have brown sugar, will that raise the blood sugar like regular sugar?

way too much...replace the sugar with some splenda and some protein powder or something...

Yeah - i havent made em since that intial time but I would replace it with splenda today.

This was before my Insulin studies and before i knew anything about IGT, Insulin Sensitivity, GI, etc..

This receipe has since been updated with some changes to address the sugar issue

I dont - this is healthy. WHy do you consider it a cheat food?

Fat: 2g
Carbs: 13g (11 Net)
Fiber: 2g
Protein: 3g

Only 1-2g is sugar and the rest is good clean carbs. Oh and if you want to get picky - I havnt made these since the first time I posted this. I made one batch after that I never finished =)

Its just all that brown sugar sounds pretty bad!

If you re-read the second nutritional facts are WITHOUT brown sugar. Its all splenda =)

I nice variation on these might be to add 1 Tb cocoa powder? I looked on the nutrition facts for is and it actually has mor protein than carbs! Of course, this is because it is unsweetened, etc... I'm going to make these once I get some whole wheat flour...

Yeah spice it up mang. This is my version of the original recipe. I always change things around and I encourage others to do the same. LIke i said though I havent made these in awhile (I Generally dont have time and I usually dont "Snack") but other people I have given this recipe to love it =)
