This one is easy and requires a minimum of cooking skills. So I qualify to make it. It can be done nearly fat free or low carb...whatever makes you happy.
Ingredients:
Shrimp 2 cups
Commercial oriental ginger sauce (any kind of oriental sauce from the "ethnic foods section will work)
Cooking spray - to save on fat. (or olive oil for some EFA stuff)
Pasta (any whole grain pasta you like) 3 cups cooked.
Bag of frozen vegetables (I like the oriental
stir fry veggies)
Cook shrimp on medium high 2-3 minutes in preheated, sprayed or oiled pan.
Add frozen veggies - cook another 5-6 minutes until tender yet crispy.
Add pasta and stir in sauce to taste.
Remove from heat and serve immediately.

Now for some good low carb cutting?
Same thing but use any commercial alfredo sauce, eleminate the pasta (or use a low carb brand like dreamfields-and less of it). Use two packages of veggies instead of the pasta, or add some broccoli...whatever you like.
