favorite 30 minute meal


Just wondering if anyone has a fav. quick and healthy meal they could share with me =). I am trying to be good and prepare dinner at home each night after work but have run out of fun ideas...

Here's my warm weather favorite: Mediterranean Chicken Salad

Ingredients

* 1 pound cooked chicken or turkey, cut into bite-size pieces or strips
* 1/2 of a medium cucumber, halved lengthwise and sliced
* 1 cup chopped celery
* 1/2 cup sliced pitted kalamata olives
* 1/2 cup chopped walnuts
* 1 13.75-ounce can artichoke hearts, drained and quartered
* 1/3 cup sliced green onions
* 1/2 of a small lemon, seeded and cut into 6 wedges
* 1/2 cup olive oil
* 1/4 cup sherry vinegar or white wine vinegar
* 1/4 cup sugar
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 2 cups spinach leaves

Directions

1. In a very large bowl combine chicken, cucumber, celery, olives, walnuts, artichokes, and green onions. Set aside.

2. In a blender container or food processor bowl combine lemon (including peel), olive oil, vinegar, sugar, salt, and pepper; cover and blend until nearly smooth. Pour dressing mixture over chicken mixture; toss to combine. Cover and chill up to 2 hours. Serve on spinach leaves.

Do crockpot recipes count? They cook all day, but many take only 10 minutes to prepare. Plus, you can fix it the night before, throw the crock in the fridge, then take it out and start it as you head out the door in the morning. You might want to consider getting one.

Also, I have a book I like, American Heart Association Meals in Minutes, it's called. Not enough emphasis on whole grains, IMO, but it's easy to substitue brown rice or whole wheat pasta, or whatever into the recipes.

Oh my gosh! I used to eat soups in a can before I got the crockpot because making soup was so inconvenient, but I like soup. I can't believe how much better homemade soups taste.

I do other things besides soups, but probably half of what I make is soups!

Most are in the $20-$50 range. I paid $40 for mine, a corningware programmable 6-quart one.
