High Fiber Quick Meals


Here are 3 that I use but I'm looking for some more. Feel free to add them here!

Pumpkin Oatmeal
AM Meal
I know there are probably better options but I guess if your sick of what you have been having and want a tasty change.

2 cups oats
1 cup canned pumpkin
2 tbsp brown sugar
1/2 cup fat free milk
In a saucepan stir all ingredients on medium for about 5 minutes. 1 serving would be 1.5 cups

263 calories 3.5 grams of fat 9 grams of protein 53 carbs fiber 7 grams

Do u think it would be wiser to ditch the brown sugar and use vanilla instead?

Advocado Blackbean Salad

1 cup cherry tomoatoes
1 cup black beans
1 tbspon olive oil and adjust vinegar to taste
1/4 diced peeled advocado
pepper
salt
garlic


In a bowl mix ingredients except advocado let sit for 15 minutes then add in advocado. Serving 1 cup 250 cals 5 grams fat 7 grams protein 26 carbs fiber 15.2 grams

Light pea and chive soup

2 cups low sodium chicken broth
2 cups froxen peas
1 tbsp minced fresh chives
1/4 cup reduced fat sour cream

in pot bring broth to a boil. Add peas then reduce the heat and cook for about 3 minutes. Then pour mixture into blender and then add in sour cream until blended smooth. Then add chives.

Serving size 1.5 cups cals 204 fat 5.5g protein 14g carbs 27g fiber 9g

Is the oatmeal already cooked? Then it would make sense to me. Pumpkin Oatmeal can be delicious, especially if you add the right spices.
