These are really good- spice measurements are not exact because I don't measure spices. These taste good, have a good amount of veggies in them, and are a good low-carb meal. I usually eat them as my last meal of the day.
2 lbs lean (extra-lean, or whatever you want to use) ground turkey
1 finely chopped
bell pepper (could do more, I just didn't have any on hand)
1/2 finely chopped large onion
~5 long celery stick finely chopped
4 egg whites, 1 egg yolk
1/2 cup Wheat Germ or Bran
1/4 cup shredded (can be pre-bought) parmesan/romano/asiago cheese
Dried Sage
Dried Oregano
Dried Tyme
Chopped garlic (I used dried minced garlic- 2 Tb- according to the bottle, this it the equivalent of 24 cloves!!!!)
Pepper
Salt
Red Pepper flakes
Tomato Sauce (careful)-optional
Combine all ingredients thoroughly. The vegetables should comprise a significant amount of the mixture. Make sure to use salt if you don't want them bland. This makes a lot ~30 meat balls if you make them 1/2" or so larger than a golf ball. Bake @ 350 for ~1 hour until done (I'm guessing at the time) You can pour tomato sauce over them if you want, just make sure the tomato sauce is clean.
Here's the break down for 1/6 of the recipe (~5 meat balls)
322 calories
14 grams of fat (I used 93% lean turkey)
11 grams carbs (3 grams fiber) (This is with wheat GERM)
39 grams of protein
Modification I would make- I would use Bran- I'm pretty sure it has significantly less carbs and more fiber. If I could, I would use leaner turkey, but that's too expensive, and the fat from these works in my diet. I also pour a little Classico Tomato and Basil Sauce over them. What are some other vegetables I could mince and put into these? I also don't eat 5 meat balls, but 4 instead, so I get about 7 servings out of one pan, instead of 6.
