1 Egg yolk raw at
room temperature
A touch of vinegar 1-2 teaspoons
Salt & Pepper
A pinch of Dry Mustard (I use chinese hot mustard)
Slowly add olive oil until it thickens. (about 2 tablespoons)
A hand mixer makes all this possible in about 90 seconds.
This particular mix is full of omega-3's from the olive oil and tastes great on tuna or
chicken salad. Although it is great alone, feel free to mix in herbs, spices, or roasted garlic. Just be sure you add them after the base is done or it may not thicken properly.
