Mom's Chickpea Salad
Mom gave me her most awesomest recipe for chickpea salad. midgetcop and I love this stuff after a workout!
1 can of chickpeas, drained and rinsed
1 - 2 stalks celery
2 - 3 pickles, shredded on a cheese grater
S + P to taste
Lemon juice to taste (my addition)
Mayo (about 1 tablespoon)
After cleaning the celery, chop it up small. Put in a large bowl.
Take your pickles and grate them on the cheese grater. This way you get nice slivers of pickle. YUM! Put this in the bowl once you're done.
Add chickpeas.
Combine all ingredients. Add lemon juice, salt and pepper, mayo. Combine. Check for seasoning. Add more if needed. Serve.
I eat this straight out of the bowl. It's awesome, and full of protein and fibre! YUMMY!
P.S. Make sure the chickpeas are drained very well so there's no water left. Otherwise, the mayo will get diluted and turn into this liquid at the bottom of the bowl. Not tasty at all!
