Oven Baked Salmon Salad


Super easy and reasonably quick to prepare, very easy to make to Zone specifications as well if that's your style.

Ingredients

Salmon fillet
Lettuce mix
Baby Spinach
Grape tomatoes
Coriander
Fetta
Avocado
Salt and Pepper
Olive oil
Vinaigrette/salad dressing of choice

All amounts are really up to you - do you want a big salad to feed a table or just a snack for yourself? scale to suit.

To prepare
The Fish
1. Salt and Pepper your Salmon to taste give it a dash of olive oil, wrap it loosely in aluminum foil and put it in a medium oven for 10-15mins (it's done when you can flake it with a fork).

The Salad
2. Mix all your salad ingredients into a bowl. It's that simple . Coriander really makes this dish - be sure to use a fresh bushel and chop it finely, about a teaspoon of chopped leaf per large handful of salad mix I find is a good ratio.

Cube your avocado and fetta, just drop the tomatoes on in there.

Once your fish is done flake it into your salad, top with a splash of vinaigrette/salad dressing of your choice.

Serve and Enjoy.
