I'm still working on tuning the recipie but here is what is tastes good now. I have been making a large batch every sunday and freezing it for work.

1 Can Hominy ( yellow or white.... yellow is a little sweeter ).
1 lb diced lean pork ( pork loin )
12-16 oz green chile ( 1 1/2 - 2 cups ) (
1/3 cup diced green pepper
1/3 cup diced onion
1 clove minced garlic
1 tsp Oregano
Salt + Pepper to taste

If you want less fat, trim it off first.
Grill the porkloin to Rare/medium rare and dice ( it will cook more in the stew )
Add pork and above ingredients ( including the liquid ) to crockpot/large sauce pan, bring to boil then let simmer 60 minutes. Add water if needed, should be consistancy of a hearty stew.

Makes about 4 servings
From fitday, thise works out to about

300 calories per serving ( 18% carb, 46%Protien, 36%fat )

17.5 grams Carbohydrate
35 grams Protien
12 grams of fat
4 grams of fiber
