Poultry: 8-hour Crockpot Chicken


A simple, healthy way to cook chicken that can be eaten as a stew, taken out and shredded for sandwiches, or diced for a salad. Lots of possibilities!

Ingredients:

1 pkg chicken breasts (usually 8-12)
3/4 c Newman's Own Lighten Up Balsamic Vinegrette Salad Dressing
1 1/4 c water
1/4 chopped onion
1 c sliced carrots
1 c frozen green beans

Place vegetables in bottom of crockpot/slow cooker. Add chicken and then pour dressing and water on top. Be sure to cover all ingredients with liquid, if necessary add more water. After placing lid on cooker turn unit on low and cook for 8 hours, stirring once or twice if possible during cooking time.
