Diet Coke Chicken!


I eat this everyonce in awhile when I get sick of grilling my chicken on the Foreman...

Diet Coke Chicken

Ingredients
4 skinless, boneless Chicken Breasts
3/4 cup Organic Fruit Sweetened Ketchup [I use Westbrae- you can find it at King Soopers, Safeway, and almost all natural food stores. It doesn't contain nearly as much sugar!]
A squirt or two of Heinz Ketchup
12 oz Diet Coke

Instructions:

Put chicken in non-stick skillet. Pour ketchup and Diet Coke over the top. Bring to a boil. Cover and reduce heat and cook 35-45 minutes or until chicken is done. Remove chicken and set aside. Cook sauce uncovered until the sauce becomes thick, pour a little bit of the extra sauce on the chicken for extra flavor. Serve with a heaping side of veggies. *pats belly*



This recipe is also easy to make into "single servings" [just dump enough of everything in so the chicken cooks evenly in the 'sauce'] aaaand it also tastes great with diet dr. pepper, diet mug rootbeer, and diet wild cherry pepsi!

Hmm interesting concept. Not one i would have thought of heh. I will give it a try =)

I think no sugar added tomato sauce would also do well in replace of ketchup. Just make sure the diet pop you add is sweeter- such as wild cherry diet pepsi or the diet rootbeer...
