Getting some flavor to chicken


We all love chicken. It's good protein, low-fat... all the good stuff. But what about flavor? Not that much in my opinion. The solution? Marinade. Here are two variations on that theme.

The first thing you'll need is a good Tupperware-type container that closes tightly and that fits your ingredients. Make sure it's airtight.

Lemon BBQ chicken

Mix 4 part squeezed lemon juice (no need to squeeze it yourself, just get the bottled kind) with 1-2 parts BBQ seasoning/sauce of your preference. Add some extra spices. I prefer cayenne powder. Get 3-4 skinless and boneless chicken breasts and cut them into fairly smalle pieces (how small is up to you). Out all of this into the airtight container (make sure that the marinade completely covers the chicken pieces) and let that stand in the refrigerator for 6-12 hours (overnight works well). Pour off the marinade and fry in a non-stick pan.


Tandoori chicken

Since the number of spices in true tandoori chicken are quite many I prefer to use a spicemix for this. You can probably find quite a few to choose from. Mix equal parts tomato juice and squeezed lemon juice and mix in the spicemix. Prepare the chicken as above and let it stand just as above.

(The leftover marinade from the second recipe can be used to make a nice sauce if you add some fried vegetables, in olive oil of course, and let it simmer for about 5 min. You can add some flour to thicken a bit if you want to.)

That lemon BBQ recipe sounds good, ebon. I used to always order orange chicken everytime I ate Chinese. Unfortunately, I had to give it up. This obviously a healthier alternative. I will give it a try. Thanks!

thanks for the marinade recipes, always love the lemon chicken combos... i use a vaccum sealer to marinade, does it in seconds... just use one of cannisters available with the check valves in the lid so you can suck the air out and create the vaccum... the marinade migrates to the places the air used to be inside the chicken/anything... the longer you leave it in there the deeper it gets, but after the intial vaccum... the liquid is probably 3/4 into the deepth depending on the thickness...

thats the machine i use... its great for lots of stuff, i make meals vaccum and freeze then just have to boil when ready... and for the marinade it rocks

I had never thought of using mine that way. I used to vacuum seal things alot, but I go through food too fast and have too little freezer space to make it worth the trouble.

That's a great idea. Takes the hassle out of marinating over time to make sure the flavor actually goes into the chicken. I'll have to look into that.
