We all love chicken. It's good protein, low-fat... all the good stuff. But what about flavor? Not that much in my opinion. The solution? Marinade. Here are two variations on that theme.
The first thing you'll need is a good Tupperware-type container that closes tightly and that fits your ingredients. Make sure it's airtight.
Lemon BBQ chicken
Mix 4 part squeezed lemon juice (no need to squeeze it yourself, just get the bottled kind) with 1-2 parts BBQ seasoning/sauce of your preference. Add some extra spices. I prefer cayenne powder. Get 3-4 skinless and
boneless chicken breasts and cut them into fairly smalle pieces (how small is up to you). Out all of this into the airtight container (make sure that the marinade completely covers the chicken pieces) and let that stand in the refrigerator for 6-12 hours (overnight works well). Pour off the marinade and fry in a non-stick pan.
Tandoori chicken
Since the number of spices in true tandoori chicken are quite many I prefer to use a spicemix for this. You can probably find quite a few to choose from. Mix equal parts tomato juice and squeezed lemon juice and mix in the spicemix. Prepare the chicken as above and let it stand just as above.
(The leftover marinade from the second recipe can be used to make a nice sauce if you add some fried vegetables, in olive oil of course, and let it simmer for about 5 min. You can add some flour to thicken a bit if you want to.)
