But i had to bring up this recipe especially. I made this tonight and it is AWSOME. I was hesitant about chicken and penaut butter but damn is it good. Here is mine with a few minor changes and the link to the original is above =)
Asian Chicken Curry
Makes 2 servings.
Ingredients:
12 oz. Grilled chicken breast, sliced
1 green bell pepper, sliced
1/4 cup sliced Onion
6 white mushrooms, sliced
1 cup chicken broth
1/2 Zucchini, sliced into 1/2 inch circles
4 tablespoons natural peanut butter
2 cloves garlic, finely chopped
Instructions:
Stir-fry the veggies in a nonstick pan over medium-high heat with
cooking spray for a couple of minutes, then add the chicken and broth.
Bring to a boil, then stir-in a dash of tumeric (not too much), some schzeuan powder, as much chili powder as you dare, a teaspoon of oregano, a dash of cumin, and pepper.
Set to medium-low and cover for 7-10 minutes. Stir-in the peanut butter slowly, then serve it up.
