Turkey Sausage


Make into patties, freeze, layered on a cookie sheet with wax paper. Put in baggies when frozen.

I usually make 3-4 lbs at a time and freeze.

1 to 1/2 lbs lean ground turkey
1 clove crushed or minced garlic
1 teaspoon red pepper flakes
1/2 to 1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon or more crushed coriander seed (I crush it with a small mallet in a bowl)
1 teaspoon or more fennel seed

Mix together and make patties. Great for Pita Pizzas~
