Protein Bars


Protein Bar Recipe

2.5 Tb (2 Tb+1 ½ tsp) nut butter (I’ve used hazelnut and peanut)
2+ Tb Honey
3 oz. Whey Protein
2 cups oatmeal (dry) or other cereal
Water (warm)
Whole wheat flour

Heat the nut butter and honey together and mix, then add whey protein- it should seem like a lot, and it will make little crumbs- nothing like a bar yet

If you want chocolate flavor- add ¼ cup or less cocoa powder

Add 2 cups of oatmeal, OR in combination with another cereal- I like Kashi GoLean Crunch. If you use just oatmeal, consider adding more honey; I don’t, but I don’t care whether they taste sweet or not. It depends how much sweetness the oatmeal adds

This is also when you could add dried fruit, chopped nuts, chocolate chips, flax seed, wheat bran/germ, or anything else for that matter.

Add 1 Tb of water at a time until it comes together into a bar- you’re going to have to use your hands, unless you have some sort of diamond stirring spoon. It’s gonna be sticky. I add just a little too much because….

Add some whole wheat flour (1-2 Tb) and knead it into the bar until it is the right consistency (it should maybe be a little less firm than you want it in the end, but not too wet)

Press it into a lightly greased loaf pan and refrigerate, covered with plastic, until firm, about 1-2 hours. (this step could even be considered optional)

Using a spatula or other kitchen tool, remove entire bar from pan; it should be one big bar, and cut into pieces (I cut it into 4 pieces), then wrap individually in plastic wrap and refrigerate- I don’t know how they stay at room temperature, but they really should keep pretty well, considering there isn’t any dairy or anything like that in them.

I just typed this up for someone else, so I thought I'd share it here. They are actually pretty filling, and as you see, extremely versatile.

So you don't have to bake it? Sounds good. Have you tried baking?

I've tried my own recipe where you bake it and it turned out inedible. For this recipe, I have not tried baking it- I really don't see what that would do! I'm not sure how that would affect the protein, either.
