Protein packed chili


Something I do every now and again when I notice i've got some produce that's about to expire is to make a big batch of chili to clear out the veggie drawer. You can adjust the portion sizes to match your needs. Makes a great healthy, quick meal and depending on how much you make, it will last you for quite a while.

1.5-2lbs extra lean ground beef (or ground turkey) cooked
1 can black beans (drained & washed)
1 can kidney beans (drained & washed)
1 can corn (drained)
1-2 cans low sodium tomato sauce (depending on can size)
1 can diced tomatoes (drained)
1 packet Club House chili spices

….here's where you can get creative, I'll just list what I put in my most recent batch, but you can put in whatever produce you like

- 1 small chopped onion
- 2 chopped plum tomatoes
- 1 large green pepper
- 2 cups broccoli florets

Toss all the veggies, sauce, and spice into a pot and heat until it starts bubbling. Add the ground beef and let simmer for 15-20 minutes (you can let it go longer if you want the veggies a little softer).

I haven't bothered to calculate the macronutrient content in this, as it tends to be different each time I make it. You can be as creative as you like with this. Try different spice, different veggie combinations. I started doing this because I got sick of throwing out all this produce that never got eaten. Enjoy!

That is exactly how I make most of my chili and soup for that matter - clear out the veggie drawer. The only exception is I put it all in a crock pot and cook it all day (while I'm working). Easy & great dinner.

yup. me too i usualy make soups and chilis based on what is left over in the fridge! in chili i love to throw in bell peppers and jalipeno. also love to use the diced fire roasted tomatoes for more of a smokey flavor! oh also this might sound werid but i love to add in a can of fat free refried beans at the end to thicken it up.

guess what i have for lunch today? homemade chili! it will last me the whole week!

If you take whole beans (less fat than refried) and mash them it will also thicken the mixture.

I like to make shredded beef from stewing beef cubes and sub that in for ground beef.
