Seafood: Blackened Salmon Fillets


Not bad, here is one that I LOVE =)

Blackened Salmon Fillets

Ingredients:
1 tablespoon ground paprika
1-1/2 teaspoons ground cayenne pepper
1-1/2 teaspoons onion powder
1/4 teaspoon ground black pepper
1/8 teaspoon dried thyme
1/8 teaspoon chilli powder
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
2 salmon fillets, skin and bones removed
1 Tbs Olive Oil

Directions
In a small bowl, mix paprika, cayenne pepper, onion powder, black pepper, thyme, basil and oregano.

Then, brush salmon fillets on both sides with olive oil, and sprinkle evenly with the cayenne pepper mixture.

In a large, heavy skillet over high heat, cook salmon, until blackened. This will take approx 2 to 5 minutes. Turn fillets and continue cooking until blackened and fish is easily flaked with a fork.

This baby will smoke (hence the name) when you cook it so be sure to do it in a well ventelated area (Like outside).
