Salmon Patties


Ingredients:

1 (14 oz) can of salmon
2 eggs- preferably large, extra large, or jumbo
1 tablespoon white flour
3 tablespoons corn meal
1/2 small yellow onion- finely chopped
1 small can of mushrooms**

**Note this last ingredient is entirely optional. 1/4 of a finely chopped green pepper or any other vegetable of your choice will also work.

Directions:

Mix ingredients in a bowl. Be sure to remove the bones from the salmon.

Add spices to taste.

Form into patties or cakes.

Cook in a large pan or skillet sprayed with olive oil. If you make them thick like I do, it will be necessary to turn the patties at least once, so I also spray the tops of the patties with olive oil once I've put them in. Cook on medium heat for thicker patties and high heat for thinner ones.

Nutritional Data: protien/carbohydrates (fiber)/fat (sat. fat)

Corn meal 03 / 20(2) / 01 100 Kcal
Flour 01 / 07 / 00 32 Kcal
Salmon 84 / 00 / 35(7) 630 Kcal
Eggs 12 / 01 / 10(3) 149 Kcal
Onion 01 / 9(2) / 00 38 Kcal
Mushroom 04 / 06 / 00 40 Kcal

Total: 105 / 43(4) / 46(10) 989 Kcal
Percentages: 55% / 21% / 24%

As you can see, there are very few carbs and lots of protein and good fats. Enjoy.

If you have a Whole Foods, Alfalfa's or Wild Oats by you check out the frozen section for Omega Foods. They manufacture all natural frozen fish burgers that are Gluten Free, Dairy Free, 99% fat and no preservatives. They're also low in carbs. Each patty has 22 grams of fat. Plus, you'll get all natural Omega 3 fatty acids.

Don't get me wrong.... you're recipe is top notch. These frozen patties are easy. Enjoy (if you find them)

I appreciate the compliments. It's my Dad's recipe. I don't recall my local whole foods store carrying Omega Foods. It's something to think about should I run across some.

And, they make more than salmon. They make mahi-mahi, tuna, and shrimp. Totally yummy! Here's what the nutritional says (per patty):

Sat. fat 0.6g
Omega 3 Fatty acids 1.25

Carbs 4g
Protein 22 grams

BTW does salmon comes shredded or something? How can u make it into a patty shape?

You buy it in a can. The meat, kept moist, just falls apart when you stir it with the rest of ingredients

I made this recipe again last night, but I changed some things.
I didn't have mushrooms, I used chopped onions.
I didn't have cornmeal, I used bread crumbs.

I had several left over b/c I doubled the recipe. These are excellent as sandwiches.

That's a good thought. The veggies totally interchangeable with whatever you like. How did the bread crumbs turn out?

The bread crumbs were just fine, actually. I'd recommend them if one didn't have any corn meal.

Yep. A typo. 22 grams of protein. I've got the box in front of me, here's the other break down:

Total Fat: 2.5 grams
Sat Fat: 0.6g
Omega-3 Fatty acids 1.25g

I've been playing around with this a lot and I think I've finally hit on a combo that works for me.

I use matzoh meal in place of the corn meal (which is basically the same thing), a little corn starch in place of the flour and egg beaters (or the equivelant) and the little twists that put them over the top for me have been crushed red pepper flakes and a tiny dash of liquid smoke mixed with the egg beaters before adding to the dry ingredients.

As an aside, I leave the bones in. They're plenty soft enough to be almost unnoticable and they account for a fair chunk of the total calcium.
