Ingredients:
1 (14 oz) can of salmon
2 eggs- preferably large, extra large, or jumbo
1 tablespoon
white flour
3 tablespoons corn meal
1/2 small yellow onion- finely chopped
1 small can of mushrooms**
**Note this last ingredient is entirely optional. 1/4 of a finely chopped
green pepper or any other vegetable of your choice will also work.
Directions:
Mix ingredients in a bowl. Be sure to remove the bones from the salmon.
Add spices to taste.
Form into patties or cakes.
Cook in a large pan or skillet sprayed with olive oil. If you make them thick like I do, it will be necessary to turn the patties at least once, so I also spray the tops of the patties with olive oil once I've put them in. Cook on medium heat for thicker patties and high heat for thinner ones.
