This is a simple and deliciously healthy recipe.
2 cups chopped onion (red or white work well, I wouldn't reccomend green though)
3 cups chopped tomatoes
2-4 Tablespoons lime juice (more if you like, the citrus flavor dulls a lot in a day, so if it seems limey, it won't be so much the next day)
1-3 teaspoons salt, or more if you like
You can either use chiles or cayenne pepper for heat, but I leave it the way it is.
Mix all the above together and it is best if you wait a day to let the flavors blend, if you use it that day, then don't do as much lime and salt, as they will be more pronounced.
I use this as my new salad dressing. Mix up some
romaine lettuce,
grilled chicken, brown rice (lime-cilantro if you wish), bell peppers and onions if you want, and I use lots of pico de gallo, and it is sooooooooo good, and it's so much better for you than Chipotle... Did you know a burrito bowl with rice, lettuce, fajita vegetables, chicken, and pico de gallo has more than 20 grams of fat? I guess the fajita vegetables, chicken, and rice are loaded with fat, and it isn't necessarily good fat.
You could also make a little quesadilla, using this, some mozz. cheese, and 2 la tortilla factory tortillas. Throw in the oven and it's done. You could also just use it as a topping for chicken, potatoes (red, of course), or rice. This stuff is just so much better than bought salsa, I'm never buying salsa again, seriously!
