Hi, Everyone!

Hopefully all of you saw Ironman's exciting announcement regarding a new Discuss Fitness Newsletter! If you haven't, check it out: http://www.discussfitness.com/forums...tml#post362609

We would like to hear from YOU! If you would like the chance to have your recipe featured in the Spring issue of the Discuss Fitness newsletter, please post your original recipe with basic nutrient info such as calories, carbs, protein, fat per serving in this thread by Sunday, February 11, 2007.

Please note: if you do submit a recipe that is not an original, you must include the author and website it was taken from.

Brat's Mom's Diabetic Bran Muffins

Author: the local Diabetes Clinic

1 teaspoon baking soda
1 teaspoon salt (use less if you want)
1 cup flour (use whole wheat if you want)
2 cups bran
1 1/4 cup milk (I use soy)
1/2 cup molassas (I use blackstrap)
1 egg

Sift flour, soda and salt together. Add bran, egg milk and molassas. Mix until all ingredients are combined. Divid into 12 muffins and bake at 350 deg F for 20 minutes.

Cals: 101
Protein: 4g
Carbohydrate: 22g
Fat: 5g
Fibre:6g

You might want to double check the nutritional breakdown. I'm not sure if it adds up right.

looks like total cals is off

Or maybe I didn't enter the individual ingredients right. Whatever, just skip the breakdown or put it in nutrition data. I think that's what I had done to begin with. Anyways they are really good for what they are (bran muffins) and don't have fat in the recipe. With all that fibre they just scoot right thru you like a clean sweep with a new broom!

My Mom and I were making so many batches of these at one time we were buying bulk black strap molassas in a large commerical pail, more for the convenience than the money saving.
