Sweet and Spicy tuna wraps

This one is great for your brown bag lunch when your tired of sandwiches. Or even for a quick dinner.

http://www.starkist.com/template.asp....asp&pageNum=6

1 5-oz. pouch Sweet and Spicy Starkist Tuna Creations
1/2 cup carrots, shredded
3 fresh basil leaves, cut into strips (optional)
3 Tbsp. creamy italian dressing
2 flour tortillas (I substituted whole wheat Italian herb wraps instead of plain ol' boring tortillas)
1 cup shredded lettuce
1/2 cup tomato, diced
4 oz. shredded mozzarella cheese

In a small bowl, mix together tuna, carrots, basil and 2 tbsp. dressing. On the center of each tortilla place 1/2 cup lettuce, 1/4 cup tomatoes, 1/2 tbsp. dressing, half tuna mixture and 2 oz. mozzarella cheese. Fold end of tortilla over the above ingredients and wrap tightly. Cut in half, diagonally, serve. Makes 2 servings, 1 wrap each.

I liked this recipe, but the next time I make it, I think I'll make a few changes:

I think I'll use more creamy italian dressing. I like my tuna a bit moister than it came out using only 2 tbsp.

I think I'll use cheddar cheese and less of it. I weighed out the mozzarella cheese, and two ounces is a lot. Cheddar has more flavor, which I'd prefer here; I really only like mozzarella on certain things, like pizza

To save time and because I am lazy, I bought lettuce shreds and matchstick carrots, so I only had to cut the tomatoes and basil.

I had trouble getting mine to wrap up. I had to eat it with a fork.

Hey, thanks for the recipie. I do like my tuna sweet and spicy. I'm not much of one to eat flour tortillas but I'm sure I can find a whole wheat or low carb wrap substitue.

Thanks for sharing.

I used a whole wheat wrap. I think the brand is Flat-Out or something similar. I got them at Wal-Mart right in front of the deli meat and cheese cases.

I made the wraps again today with my changes, but my friends usually go out for lunch on Thursdays (at least this semester) so I may not get to taste it until tomorrow. I had more success in rolling them this time, perhaps because I used less cheese.
