Tilapia tacos


Makes 2 tacos.

Ingredients:
1 Tilapia fillet (approx 6 oz.) 20p 0c 3.5f
1/3 can of cooked black beans 7p 19c 1f (7g fiber!)
1/2 cup of cooked brown rice 2p 11c .5f
2 corn tortillas 2p 20c 0f
Fish seasoning (I recommend Emeril's Fish Rub)

-Cook the tilapia over dry heat or in olive oil (my nutrition breakdown is w/out oil)
-Steam the rice as usual
-cook the beans in a skillet or microwave
-heat up the tortillas using thongs over your stovetop

Combine to make some great tilapia tacos!

Each taco: 15.5p 25c 2.5f 185 calories

I can't resist.... My thongs never go anywhere near the stovetop and they are lousy at "heating up tortillas"

I make similar fish tacos, but I grill the Tilapia. I use a grill topper over the grill grates to prevent the fish filets from falling through. A grill topper is one of those perforated flat trays designed for grilling small items. Buy one where you buy outdoor grills.

I make my own seasoning from a tablespoon of Ancho powder, a teaspoon of cumin, a teaspoon of garlic powder and a 1/4 teaspoon of oregano. mix together and put in a shaker, then sprinkle on both sides of the fish fillets. This is enough seasoning mix for two or three batches. (It's good on grilled chicken too.)

I spray the grill topper lightly with olive oil spray and allow it to heat up before adding the fish fillets.

I garnish the tacos with angel hair shredded cabbage, black beans, a slice of avocado or a dab of guacamole, and a spoon of fresh Pico de Gallo. If you want, add a bit of fat-free shredded cheddar.

Sometimes I use low-fat flour tortillas and make a wrap.
