Turkey Chili with Black Beans


I created this recipe to make some healthier chili pies for dinner tonight. For those who aren't familiar with chili pie, it's a bowl of Fritos corn chips smothered with chili and onions and topped with cheese.

Well, the chili came out great all by itself, so I thought I'd share. Enjoy:

Turkey Chili w/Black Beans

3 pounds Turkey, ground, 7% fat
2 cans tomato sauce, 8 oz
1 can diced tomatoes & green chiles, Ro-Tel
1 can black beans, canned, 15 oz

2 tablespoons Ancho Chile powder
2 tablespoons Mild Red Chile Powder
1 tablespoon Garlic Powder, granulated
1 teaspoon oregano, dry leaf
1 teaspoon Achiote Molido (powder)
2 teaspoons Beef Base, (meat first type-Tones or Minor's brand)
1 teaspoon salt substitute
1 cup water
Brown turkey meat in 6 qt pot. Drain off all fat & water. Combine dry spices in a small bowl and add to browned, drained meat. Stir to evenly coat meat with spices and cook 2 minutes over med flame, stirring constantly. Add 1 cup water and bring to a low boil. Add beef base and stir to diissolve. Add canned ingredients and salt substitute. Bring to a boil. Reduce heat and simmer 30 to 45 minutes, stirring occasionally to prevent sticking.

Guiltless chili pie:
Ladle turkey chili over a bowl of baked plain corn chips. Sprinkle with diced onion and top with fat-free or reduced fat Cheddar, Monterey Jack, or crumbled Queso Fresca cheese. Garnish with a dollop of fat-free sour cream or salsa.
