Italian-Greens and Beans...Food of the Gods


A great dish always starts off in the supermarket... depending on what part of the country you live in there should be a good selection of fresh greens...Escarole or dandelions are best but almost any dark green leafy will do... 12 oz can of chicken broth...can of great northern white beans ...when you get home soak the greens in cold water for an 1/2 hr and then in a big pot or plastic bin fill with cold water and wash and rise 3 times at least! when u stop seeing dirt in the drained water then u break each leaf off and wash separately...if u get dirt in your greens and beans its ruined so I cant euphemize it enough get em clean...after u wash ur greens put in a big pot and boil...30 min or until very tender....then (IMPORTANT!) DRAIN WATER! ITS VERY BITTER!!!...then rinse in a drainer with cold water to stop the cooking process.....in a deep satire pan add 3 tablespoon of olive oil on low/med heat ...chop half onion med/fine add to hot oil with chopped garlic..I use a lot!...watching close not to burn (or u have to start over) cook till tender then slowly add chicken broth + half can of cold water (becareful the oil is HOT!)...bring to a boil ...add drained beans bring to a slow boil...simmer 5 min...add greens simmer 5 more min ...salt, pepper at the end. graded cheese if u want...this dish has it all...complex carbs...protein from the beans and lots of natural vitamins and fiber....FOOD OF THE GODS!!! serve with crusty Italian bread...Mangiare ! (eat!)

Would buying frozen pre-cooked spinach work just as well? It seems it would really cut the prep time for those of us who are lazy.

yep...use any Greens that u like


Yes Use any greens...frozen or canned...froz would be better for the Vitamins
