My mom got this recipe from my favorite restaurant in the world....Pete and Sam's in memphis, TN. My grandparents live in memphis and every time we go visit them (which is pretty regularly since we're pretty close) we go to this restaurant. It's kind of a dingy little italian restaurant but it is WONDERFUL! I'm usually not a big spinach fan, but this is sooo good! I usually just get a salad and a big plate of spinach when i eat there. Sorry the measurements aren't exact...it's kinda of an "eyeball it" recipe! ENJOY!
1 package frozen spinach (thawed and excess water squeezed out---very important)
1 tsp minced garlic (fresh or from the little container)
1 egg (or egg substitute)
2 tbsp olive oil
grated parmesan (to taste)
salt (to taste)
1. Add 2 tbsp olive oil to a pan and let heat
2. Add in spinach and stir for 3-4 minutes (until it's cooked basically)
3. Stir the spinach to the side and make a little space to crack the egg.
4. Let the egg cook a little and stir into the spinach.
5. Add garlic
6. Add parmesan.
Sorry this isn't an exact recipe. I just kinda learned how to cook it by watching my mom. It's a VERY easy recipe and it's kinda hard to mess up. Trust me, if i can cook it, ANYONE can! Tell me what y'all think
