are you SURE you're only getting 2500 calories a day?? to have gained 9lbs in 7 weeks would mean you were eating 643 calories over maintenance and there's no way maintenance for someone five-seven who exercises is 1657 to 1957 a day.
regardless, to cut, your best results would be from a timed carb diet. that's where you pile your carbs up before and after your workouts and cut them back sharply on days you don't work out. ratio should be in the area of 40% protein and fat, 20% carbs. greenies (salad veggies, green beans, broccoli, etc), you can eat all you want.
