Basic Q: How to season chicken?
I eat a hell of a lot of chicken, but only ever grill Skinless Breast Fillets from fresh and it's getting boring so I want to season it but not sure what I'm doing. I have salt, pepper and paprika. Last time I tried adding paprika before grilling, the paprika simply burnt and left my fillet with black scabs
So what's a real simple way of giving breast fillets some flavour?
What to do, how long to leave it etc, just a real simple guide if anyone can help.

marinade it overnight in italian dressing or similar. This will help retain the moisture while cooking and add flavor.

right, but dont marinade it paprika... thats still very bland... just buy yourself some marinades, marinade usually takes half hour, better if left overnight, hell half the time I just throw it in while cooking the meat.
you can cook it, then brush or spoon some bbq on it, make sure than pan is fairly dry
or use worshtishershire sauce <--however you say or spell it.

Buy yourself some marinades you may like (I really like a line by "Ken's") or make your own marinade. Then toss the chicken in with the marinade into ziplock back and into the freezer the day before cooking them.

pierce the chicken with lots of holes and put it on some tin foil (make sure the chicken is encased in it, so no liquid will run out), then squeeze some lemon and or olive oil over it and hey presto moist, and not so bland chicken breast fillet!

if you fancy a Chinese twist, try: tamarin paste, soy sauce (not too much), Chinese 5 spice, garlic and ginger.
leave to marinade overnight (covered!!! - unless you want your entire food stock to taste of it)

dude... one of those "cajun injector" creole butter things is THE BEST THING TO HAPPEN TO CHICKEN!
or you could season it to whatever end you want and shove a can of budlight up it's ass and throw it on the grill until the meat falls off.. **** canned chicken is AWESOME!

making marinade is easy, usually just a mix of oil/vinegar/juices/soy sauce etc. along with herbs/spices.
i made a marinade with 2TB each brown sugar, soy sauce, bourbon, and 1TB lime juice and sesame oil, some ginger, garlic and black pepper.
It was for salmon, but would work fine with chicken too.
heres another I found...
Jalepeno-lime marinade:
1/2 cup OJ

what do you mean, you don't know what to phsyically do?
1. go to store, buy stuff (soy sauce, vinegars, oils, spices)
2. mix stuff together to make marinade
3. marinade chicken
4. cook chicken
5. eat chicken
?????
