dimanteling "whole grain"


Whole grain consists of the Endosperm (only thing present in white flour), Germ (fat containing) and Bran (Fiber).

Since people swear off white flour in favor of whole wheat I was thinking of taking it one step further and adding extra bran and/or germ.

My question is what is so good about the Bran? the Germ?

Anytime I cook I use it in place of flour for greasing and flouring my baking dish. It works and adds more good stuff.

At the store last night I compared wheat germ and oat bran to oats and whole wheat. There isn't much difference (protien:carb:fat:fiber) with the bran and germ having slightly better protien fat (good fat) and fiber to carbs ratio but definately not worth the extra money.
