Eggs


I was wondering if hardboiled eggs have all the nutrients that eggs prepared other ways do. Or if cooking them that long ruins some of their nutrient value and protein.

I, personally just poach my eggs. I throw them in a non stick pan and take them out after 5 seconds. Protein is heat sensitive, if the egg is being heated for too long, a lot of the protein is lost.

You'll have no measurable drop in protein when hard boiling eggs.

Nutrient (vitamins and minerals) may be lost due to high heat, such as frying, but not protein. Protein changes form at high temps, but it is the way your body needs it. You're never going to lose protein unless you drop some on the floor.

High heat does not destroy protein, but it can destroy other nutrients
