ground pork

I'm not familiar with the lean slices of meat, but this is ground pork or maybe beef (i'm not exactly sure) and say that this is a lean part:

Can you tell at the picture if they are indeed the lean part of meat?

What does it say in the recipe? It could be anything even ground, veal chicken or turkey or TVP the way it looks.

If you are worried about fat then make sure to drain the meat as you cook it. If your diet restricts you from certain meats then try a more suitable substitute. If I was trying to be perfect about low-no fat I would avoid ground meat altogether.

A meat grinder, either as an attachment to a Kitchenaid mixer, a stand-alone powered model, or even an old fashioned hand crank model is an excellent investment. You get 100% control over what goes in your ground meat and you know exactly how fresh it is. You can take advantage of sale prices on whole primals and save some substantial dollars--more than enough to pay for the grinder.
