Dont the french also smoke like crazy ? The first think I saw as soon as I got out of the plane in Paris airport was people smoking

you said it correctly - the "was" refers to the singular, "thing".
however, "*off* the plane *at the* Paris airport" would've been a bit smoother, lol.
