Healthy Mac and Cheese


Anyone have any reciepes? I guess I could use wheat noodles and lowfat/fat free cheese, but I dont know if that is the way to go.

one thing: don't go ALL fat-free cheese - remember you do need *some* fat in your diet to transport fat-soluble vitamins like A, D, and K. perhaps just go with half fat-free, half regular cheese.

Did you try the recipe section? Here is one

Note: 350 calories, 6 g fat, 18 mg cholesterol, 57 g carbohydrate, 505 mg sodium, 16 g protein, 2 g fiber.

Not bad numbers for a carb dense food item.

Here is my favorite mac' n cheese recipe:

INGREDIENTS
4 cups cooked elbow macaroni (about 2 cups uncooked)
2 cups (8 ounces) shredded reduced-fat sharp cheddar cheese
1 cup 1% low-fat cottage cheese
3/4 cup nonfat sour cream
1/2 cup skim milk
1 1/2 teaspoons reduced-calorie stick margarine, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg, lightly beaten
Vegetable cooking spray
1/4 cup dry breadcrumbs
1 tablespoon reduced-calorie stick margarine, melted
1/4 teaspoon paprika
Fresh oregano sprigs

INSTRUCTIONS
Combine first 10 ingredients; stir well, and spoon into a 2-quart casserole coated with cooking spray. Combine breadcrumbs and next 2 ingredients; stir well. Sprinkle over casserole. Cover and bake at 350 degrees for 30 minutes. Uncover; bake 5 minutes or until set. Garnish with oregano.

I recently made this with whole wheat noodles and it was pretty good. I also use fat free cottage cheese and often skip the butter you put into the mixture. This has become one of my favorite recipes and feels a lot like comfort food.

Yeah I searched, but I dont like squash. I probably wont end up making it but ya never know. I might, who knows. Thanks

You can't tell it is squash. It tastes very similar to "real mac and cheese"

I've made this before with some moderations, like using fat-free sour cream and no powdered cheddar cheese. I don't even know if the sour cream is necessary. I only used 1/2 cup of real sharp cheddar and that worked, too.

It doesn't turn out like traditional macaroni and cheese, but more like a quiche. I really liked it though...
