Healthy nachos/tacos/fajitas?


Anyone have some tips on how to make some healthy nachos/tacos/fajitas?

Do they make wheat nachos? I think they make wheat soft taco shells?

Just looking for some ideas, as mexican food is one of my favorites. Would be nice to have it on fri night or sat.

I usually make tacos out of ground turkey which takes the exact same as the beef with the spices on it. also i usually only have one taco or fajitta with a shell then wrap the rest in lettuce. its obviously not as good as a tortilla but they're not bad either. :

I've heard when you make them with ground turkey it tastes like Taco Bell... is that true?

They taste absolutley wonderful with ground turkey. I usually add a chopped red onion and some color bell pepper to the mix too.

I usually just make a taco salad. Romaine lettuce, chopped tomato, red onion, taco meat mixture, and 1-2 Tb of light ranch dressing. The kind I have has only 25 calories and no trans fat. This is REALLY good!!!

For fajitas- I have one cheat meal at Chipotle every week and get a steak fajita burrito bowl (no tortilla), lettuce, tomato, guacamole, and of course it comes with fajita vegetables and white rice. The only really bad thing is the white rice. The steak only has 1 more gram of fat than the chicken. I also skip the cheese and sour cream- and it tastes amazing! I'd have to say this is my favorite food.

I had taco's yesterday. I use either the extra lean ground turkey or ground turkey breast, mixed with taco bell seasoning. I put it in aunt millie's low carb tortilla (80c, .5f and 11carbs). I add some fat free chedder kraft cheese with some lettuce and salsa. Its very yummy!! Yesterday i stuffed the tortilla with everything and it cooked on a pan to make it toasty!!

Here is a way to make much healther tortilla chips if you feel like cheating and want something like nachos or chips to dip.

Buy a package of corn tortillas. Usually you get about 30 for a couple bucks. Cut them into quarters and spread them out on a baking sheet. Spray them with pam and then sprinkle salt and/or other seasonings on them. Bake them at 425 degrees for 12 to 20 minutes, or until they get crispy and start to brown on the edges.

These chips taste a ton better than store-bought chips, are cheaper, and a lot healthier for you.

Hhmmm, wonder if you can do the same with low-carb whole wheat tortillas. I don't see why not. I might give that a try.
Nutrition-wise, which would be healthier, low-carb whole wheat tortillas or corn tortillas??

Corn would have more carbs, less fiber, but possibly more vitamins etc...

Low carb whole wheat would definitely have more fiber.

I guess it's pick and choose.

Corn= 98 cals, 1.5g fat, 5mg sodium, 20g carb, 2g fiber, 3g protein
Flour=146 cals, 3g fat, 250mg sodium, 25g carb, 1g fiber, 4g protein

I personally take corn over the flour because they usually have less fat and salt.

You didn't compare the corn with low-carb whole wheat tortillas. I went to the store tonight and got some fat-free corn tortillas. Not as much fiber, but that's alright. Looks like a good deal. Think I'll bake some up tomorrow. Sounds good.

cool, let us know how it goes. It is all a carrier for the salsa mostly to me. I just love salsa but need a good carrier.
