Help me make my chicken and rice taste nice


OK, so I've cleaned up my shopping list.

Lots of skinless, boneless chicken and Tuna at the moment. Now I REALLY suck at cooking. I'll give you an example of how bad I am. I'm 24, and just learned how to do scrambled/poached eggs the other day.

Now a couple of examples of what I've been eating is chicken and rice, tuna and pasta. With the tuna and pasta, I'll have a sweet potatoe, and salad. Now that one's not too bad with a bit of low fat mayo to the rescue. However, I'm REALLY stuck with my Chicken and Rice. I need a quick way to make this taste nice as I've been eating it plain for the last 3 weeks. Any ideas?

chinese fried rice!!!!!

cook up your rice, then put it in the fridge until it's very cold (this is important unless you've been looking for an excuse to buy a new set of cookware).

in the meantime, slice the chicken into thin strips diagonally across the grain.

prepare your ingredients: frozen veg (whatever kinds you like except brussels sprouts and okra don't work too well), onions, soya sauce, beef OXO packets (not the liquid), an egg (slightly beaten), ginger (fresh or ground), some brown sugar, and a bit of oil.

start by combining the soya sauce, ginger, brown sugar, and beef OXO in a bowl. taste it, then add more ginger if it's not got enough of a kick or more sugar if it's not quite sweet enough for your taste.

heat the oil over moderate-high heat, then cook the onions and chicken meat until the chicken is no longer pink and the onion are ever so slightly golden.

add the veggies, stir constantly until they're hot all the way through (or cooked if you're using raw).

drain well.

add the cold rice and KEEP STIRRING while you add teh soya mix and the beaten egg. keep stirring until the rice is all hot and the egg is cooked.

eat.

enjoy.

Spices, spices and more spices!

For one there are some really great "all spice" blends that can add a kick of flavor to any food but watch for the ones that have a high sodium content. Mrs. Dash is excellent! Otherwise, find some spices that you like alot and just add to your food before, during or after you cook. I am a garlic nut so when I cook rice, I pour in a bunch of granulated garlic and the rice takes up that flavor. You could buy cloves and saute them in some olive oil and them throw on the chicken to absorb the flavor also. It's endless really. Start experimenting, that's the best you can do.

Soy Sauce? Sweet and sour sauce? Stir fry sauce is good too.

With all of these except the soy sauce, you have to be careful about how much you use.

even be careful with soya sauce, as it's jam-packed with sodium.

Cheers guys. Guess I'll read up on Sodium then, as I don't really know anything about it hehe

Shopping day due soon, so hopefully some tasty dinners next week. Wish me luck lol.

here's another tip: pound the breast so it forms a large, flat piece of meat. you can then spread it with finely-chopped mushrooms, onions, broccoli and cheese, salsa, or whatever, then roll it up, secure it shut with toothpicks, brush a light coating of olive oil over it, then roast it in the oven at 350 until golden-brown.

Chicken. I usually take some Heinz 57 and use a brush to spread a tbsp or 2 of the stuff over about 6 chicken breasts. The amount of sugar in that sauce is minimal and it tastes great.

Drop a chicken bouillon cube in the water when you're cooking your rice.
