Homemade frozen meals?


We all have those days where we don't actually have time to fix something. We don't necessarily want to get fast food for nutritional and/or monetary reasons. For those days, I'd like to concoct my own homemade frozen meals.

I'm thinking when I cook my regular suppers, I could just fix double and then freeze what I don't eat, then thaw it out in the microwave on a day when I don't have time to fix something proper. Fixing double won't usually take any longer than fixing one portion, and it would allow me to build a stockpile of meals in my freezer.

Has anyone tried this? How does it work? Can you do it with pretty much any food?

I do it all the time. Stews are the best. Make a huge pot and freeze in single portion sizes. Be careful with dairy products. Some don't freeze well at all. I even freeze buttermilk for pancakes.

I usually cook 6 chicken breasts then eat them for several days. Store them in the fridge. Meatloaf, or most proteins, are best if slightly undercooked or cooked with extra liquids, then they don't get too dry.

like lady c said, stews/chillis freeze really well. i also like to keep salmon frozen and just move it to the fridge in the morning. then when i get home i pop it in the oven, squeeze some lemon on it and dinner is ready.

also i make a bulgar dish with veggies that i cook in a skillet then freeze. i had it in my freezer for a month and just finished it last week.

I always feel fresh food is the best, never fast food or anything like that as it's not going to provide the right nutrients for your body. I think we all feel the same, it's being bothered to provide all the meals in advance or make them ourselves.

Check out Once A Month Cooking from recipezaar. Seems to be a ton of cook & freeze recipes there.

Interesting site IronMan. The chili recipes remind me, I'm thinking about asking for a crock pot for Christmas.

I work up to 80 hours a week at times so there is now ay in heck I can fix enough meals for myself (I eat 9-10 times a day). I rely on leftovers. I don't usually freeze. Chicken breasts, brown rice, soups keep well for nearly a week. It's a lifesaver to be able to grab quick foods and heat them up.

I'm getting a crock-pot! It's on it's way from amazon now. I plan to use it to make mostly soups and chili because I'm too lazy to make them on the stove, and I can slow cook it while I'm at work. Then I can freeze my soup, so I'll have something healthy and yummy. I think it'll be much tastier than canned soups.
