The yolk is actually the richest soruce of nutrition, if you were going to throw part of the egg away you would heave out the white and eat the yolk. Of course the best method would be to eat the whole egg.
As for cholesterol, while there is no cholesterol for example in an apple, your body readily converts excess fructose to LDL cholesterol quite rapidly. It does the same to all carbs, the refined ones are extremely prone to it.
