Sushi what's safe?


I recently made my own sushi (used imitation crab meat for the trial), and it really wasn't hard at all.

My question is what fish is safe to eat raw when bought from the supermarket fresh (the kind that they keep on ice) and what is safe when bought frozen (from a prepacked pack from the freezer)?

i would avoid places like safeway and kroger, go try a whole foods or other natural market and ask them if the fish is "sushi grade", basically just meaning really fresh. If there is any kind of fishy smell then don't use it, fresh fish should never smell funky. Also if you buy a whole fish, check out the eyes, if they're foggy, it's old, don't buy it, the eyes should be clear. If you have an asian market i would give that a try. You can also get eel frozen and already prepared for cheap at those places. Just talk with the guy behind the fish counter, and if he doesn't know what you're talking about, go shop somewhere else lol

Actually sushi grade means that its been frozen at a certain temp for a certain amount of time. Its done to kill any parasites that may be in the fish. I don't hae the time/temps in my head atm, though its well below 0 for a few days at least.


Don't use the stuff in a normal grocery freeezer for sushi, it would probably be parasite free but not reason to risk it. Oh and also..get lump crab meat..that other stuff is junk thats been flavored and dyed.:

I know imitation crab meat is just polock and sugar but it worked.

Is there any thing with fresh water vs. Salt, also what are good fishes to try?

Any reciepes?

my favs are salmon, crab, mackerel and tuna. All of which are fairly easy to get... As Jallen said make sure its fresh, any fishie smell and don't use it.

I honestly don't know much about preparing sushi yet. I'd suggest grabbing a book on it so you'll know how to season and prepare it properly. Try diffrent kinds of tempura with your sushi as well, they go well together.
