Potatoes are more of a starch than a veggie. Besides, that is only one serving; you need to be eating 5 more or more.

If you're tracking your diet and calculating your calories, you need to count EVERYTHING that goes into your mouth, fruits included.

i just eat right, corn, potatos, peas, celery, lettuce are my main veggies, i dont feel like going into complicated measures on seeing how much this and how much that i need, i just cut out the crap and started eating lean and moderate sizes, i track my cal's fat, carbs and protein but as far as that im not concerned.

That's fine, but more specific tracking may be necessary to get the results you're after. You'll know if your current plan is working within a month.

corn, potatoes, peas = weight gainers from the starch or the sugar. Not bad for bulking, but if you are getting unwanted gains, consider at least changing the serving size of these or replacing some of them with fibrous greens.

Usually when referring to veggies, most of us are talking about those with more fiber. You get the nutrients without absorbing all the calories.

so if i want to lose fat but maintain/build muscle what type of carbs should i be taking? I eat alot of meat because i hear protein is what preserves the muscle, so its all lean, but I havent seen changes in two weeks, so I've spread my meals out further 5-6 small meals, my carbs are bread and pasta, veggies are carrots and lettuce. I notice alot of weight loss diets end up in soft, skinny body types, that is what i extremely want to avoid, i watch what i eat very carefully, i dont touch any junkfood whatsoever (except a slurpee once a week or so, it's summer =P) My routine has changed to

Monday - Cardio
Tuesday - Weightlift
Wednesday - cardio
Thursday - Weight lift
Friday - Cardio
Saturday - Weight lift
Sunday - Cardio

RMR - resting metabolic rate, means what it takes to have your body function WITHOUT you doing any activity. So no don't go below the RMR your body will think you are starving to death.
