You are doing great with your changes. Sneak in more raw (or cooked veggies) and you'll be right on track. Try preparing to have on hand some celery sticks, broccoli florets, carrots and or mini tomatos.

Make sure your handfuls of cashews are modest ones. They are calories dense.
