Brat's Mom's Diabetic Bran Muffins Author: The Local Diabetes Clinic 1 teaspoon baking soda 1 teaspoon salt (use less if you want) 1 cup flour (use whole wheat if you want) 2 cups bran 1 1/4 cup milk (I use soy) 1/2 cup molasses (I use blackstrap) 1 egg Sift flour, soda and salt together. Add bran, egg, milk and molasses. Mix until all ingredients are combined. Divide into 12 muffins and bake at 350 degrees F for 20 minutes. Calories: 130 Fat: 1g Cholesterol: 18mg Sodium: 325mg Carbohydrates: 28g Fiber 3g Sugar: 1g Protein: 5g Please note: nutritional data calculated with whole wheat flour and fat free/skim milk. Brat’s Protein Pancakes with Cottage Cheese 1 cup uncooked whole grain oats 6 egg whites 1 cup fat free cottage cheese ¼ tsp vanilla ¼ tsp ground cinnamon 2 packets sugar substitute Combine ingredients in a blender until smooth.
