With all the hard work put into the training it’s very important that we also EAT! This issue's featured recipes were submitted by DF member Brat. Two great recipes are featured:  Diabetic Bran Muffins and Protein Packed Pancakes.  Bon Appetite!

Brat's Mom's Diabetic Bran Muffins

Author: The Local Diabetes Clinic  
 
1 teaspoon baking soda 
1 teaspoon salt (use less if you want) 
1 cup flour (use whole wheat if you want) 
2 cups bran 
1 1/4 cup milk (I use soy) 
1/2 cup molasses (I use blackstrap) 
1 egg 
 
Sift flour, soda and salt together. Add bran, egg, milk and molasses. Mix until all ingredients are combined. Divide into 12 muffins and bake at 350 degrees F for 20 minutes.

Sodium: 325mg
Carbohydrates: 28g
Fiber 3g
Sugar: 1g
Protein: 5g

Brat’s Protein Pancakes with Cottage Cheese

1 cup uncooked whole grain oats  
6 egg whites  
1 cup fat free cottage cheese  
¼ tsp vanilla  
¼ tsp ground cinnamon  
2 packets sugar substitute  
Combine ingredients in a blender until smooth. Cook pancakes on hot skillet. Makes about 8 pancakes (depending on size).

Total calories: 530  
Total protein: 56 grams
